When you get something like this in the mail...

You’ve just got to put an egg on it.



Fresh bagels, cream cheese, wild smoked Pacific salmon fillet, thinly sliced tomato, and red onion.


Poach an egg on it. But it’s still missing something.



The pepper really holds the whole thing together.


There are more poached eggs to share, but they’re currently trapped on a camera that I had to borrow for the occasion and now can’t access. As ever, send me your eggs!
